Creamy Cajun Shrimp Pasta Bake

Ingredients:
1 lb large shrimp, peeled & deveined
8 oz spaghetti or linguine, cooked al dente
1 tbsp olive oil
1 tbsp butter
1 red bell pepper, diced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes, drained
1/2 cup heavy cream
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1 tbsp Cajun seasoning (adjust to taste)
1 tsp smoked paprika
1/2 tsp crushed red pepper flakes (optional)
Salt & black pepper to taste
1 cup fresh spinach (optional)
Chopped parsley for garnish
Directions:
Heat olive oil in a skillet. Cook shrimp for 2–3 minutes per side until pink. Season with Cajun seasoning, smoked paprika, salt, and pepper for that bold, spicy Southern flavor.
Using the same pan, melt butter. Add garlic and bell pepper until fragrant. Stir in diced tomatoes and heavy cream. Simmer 3–4 minutes until thickened this becomes your rich, creamy Cajun pasta sauce.
Add mozzarella, Parmesan, and spinach. Stir until creamy. Fold in cooked pasta and half the shrimp. This step makes your pasta ultra-cheesy and packed with seafood flavor.
Transfer everything to a baking dish. Top with remaining shrimp and extra cheese.
Bake at 375°F (190°C) for 15 minutes until melty, bubbly, and lightly browned.
Top with chopped parsley and a pinch of extra Cajun seasoning. Serve hot and enjoy the creamy, spicy goodness!
