One-Pan Hobo Casserole with Ground Beef and Potatoes

Ingredients:
1 tablespoon olive oil (or your preferred cooking oil)
1 pound lean ground beef (or substitute ground turkey)
1 medium onion, chopped
2 cloves garlic, minced (or ½ teaspoon garlic powder)
1 teaspoon dried Italian seasoning (or a mix of basil + oregano)
Salt and black pepper to taste
1½ pounds potatoes (Yukon Gold or red potatoes), cut into ½-inch cubes
1 (15 oz) can diced tomatoes, undrained
1 (15 oz) can sweet corn, drained
½ cup beef broth (or vegetable broth)
½ cup shredded cheddar cheese (optional topping)
Directions :
Preheat your oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease.
Stir in chopped onion and garlic. Cook for 4–5 minutes until softened. Season with Italian seasoning, salt, and pepper.
If using a baking dish, transfer the beef mixture into it. Sprinkle the cubed potatoes evenly over the beef.
Pour the diced tomatoes (with juice) and corn over the potatoes. Drizzle broth evenly across the top.
Cover tightly with foil and bake for 35–40 minutes, or until the potatoes are fork-tender.
Remove foil and sprinkle shredded cheddar on top. Bake for 5–10 more minutes until melted and bubbly.
