Ingredients:
2 cups cooked chicken, shredded
3 medium zucchinis, sliced into rounds
1 cup cherry tomatoes, halved
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 cup cream cheese, softened
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 tablespoon olive oil
Optional: Fresh basil for garnish
Instructions:
Preheat oven to 375°F (190°C).
In a large bowl, combine shredded chicken, zucchini rounds, cherry tomatoes, mozzarella, cream cheese, garlic powder, Italian seasoning, salt, and pepper.
Lightly grease a 9×13-inch baking dish with olive oil.
Spread the chicken zucchini mixture evenly in the dish.
Sprinkle Parmesan cheese on top.
Bake for 25–30 minutes, until zucchini is tender and the top is golden and bubbly.
Let cool slightly, then garnish with fresh basil if desired.
