Recipe Overview
Servings: 2
Prep Time: 15 minutes
Cook Time: 25–30 minutes
Ingredients:
For the Steak
2 sirloin steaks (6–8 oz each), trimmed
1 tablespoon olive oil
Salt & freshly ground black pepper
1/4 cup heavy cream
2 oz gorgonzola cheese, crumbled
1 tablespoon fresh rosemary, finely chopped (or 1 tsp dried)
1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
BbbjnFor the Mashed Potatoes
1 lb Yukon Gold potatoes, peeled and cut into 1-inch cubes
1/4 cup warm milk
2 tablespoons butter
Salt & white pepper, to taste
Pinch of nutmeg (optional)
Directions:
Place the potato chunks into a pot of cold salted water. Bring to a boil, lower to medium heat, and simmer until the potatoes are very tender (15–20 minutes).
Pat the steaks dry and season both sides generously with salt and black pepper. Dry steaks sear better and stay juicier!
Heat olive oil in a skillet over medium-high heat. When hot, add the steaks and sear for 3–5 minutes per side for medium-rare (or your preferred doneness). Transfer to a plate to rest.
In the same skillet, reduce the heat to medium.
Add heavy cream, gorgonzola cheese, rosemary, and thyme. Stir until melted and smooth. Simmer for 2–3 minutes until thickened and fragrant.
Drain the cooked potatoes, then mash with warm milk, butter, salt, white pepper, and nutmeg (optional). Mix until smooth and creamy.
Spoon the mashed potatoes onto plates, place the steaks on top or beside them, and drizzle generously with the creamy gorgonzola sauce.
