    Green Chile Chicken Stew Recipe

    This Green Chile Chicken Stew is a cozy, flavorful dinner that’s loaded with tender chicken, smoky roasted green chiles, salsa verde, and aromatic spices. Perfect for chilly nights, cold and flu season, or when your family needs a comforting one-pot meal. Serve with rice, tortilla chips, or avocado for the ultimate Southwestern-inspired stew!

    Ingredients:

    1 whole chicken (5–6 lbs) or rotisserie chicken
    6 cups water (enough to cover the chicken)
    1 yellow onion, diced
    2 tablespoons garlic, minced
    2 chicken bouillon cubes
    ½ tablespoon ground coriander
    2 teaspoons ground cumin
    ½ teaspoon smoked paprika (regular paprika works too)
    ¼ teaspoon salt
    ¼ teaspoon black pepper
    2 (4-ounce) cans diced fire-roasted green chiles
    1 (16-ounce) jar salsa verde
    1 tablespoon fresh cilantro, chopped
    2 tablespoons lime juice (1 lime, juiced)
    Optional Toppings & Add-Ins:
    Corn
    Black beans
    Sliced avocado
    Sour cream
    Steamed rice
    Tortilla chips

    Directions:

    In a large Dutch oven or stockpot, add the whole chicken and enough water to cover it. Bring to a boil, reduce to medium heat, and simmer for 40 minutes.

    Remove the chicken, let it cool slightly, then shred the chicken meat, discarding skin and bones.

    Skim foam from the broth or strain through a fine-mesh sieve. Return 6 cups of chicken broth to the pot (use 5 cups for thicker stew).

    Stir in the diced onion, garlic, bouillon cubes, coriander, cumin, paprika, salt, and pepper.

    Add the shredded chicken back to the pot along with the green chiles, salsa verde, and cilantro.

    Bring to a boil, reduce heat, and simmer for 20 minutes to let the flavors develop.

    Remove from heat, stir in fresh lime juice, and serve hot with your favorite toppings.

    Recipe Notes:

    Using a rotisserie chicken is a time-saver and adds extra flavor.
    Make it heartier by adding black beans and corn.
    This stew tastes even better the next day as the flavors deepen.
