    Mediterranean Greek Tortellini Pasta Salad

    Craving a fresh, flavor-packed pasta salad with Mediterranean vibes? This Greek Tortellini Pasta Salad is bursting with bold flavors from tangy feta cheese, juicy cherry tomatoes, briny Kalamata olives, and cheesy tortellini all tossed in a zesty homemade lemon-oregano dressing. It’s a quick and easy vegetarian pasta salad perfect for summer parties, lunches, or light dinners.

     

    Ingredients:

    For the Pasta Salad:

    1 (20 oz) package cheese tortellini (fresh or refrigerated)

    1 cup cherry tomatoes, halved

    1/3 cup Kalamata olives, sliced

    1/2 cup feta cheese, crumbled

    1/4 cup red onion, thinly sliced

    1/4 cup cucumber, diced

    2 tablespoons fresh parsley, chopped

    For the Lemon-Oregano Dressing:

    1/4 cup extra virgin olive oil

    2 tablespoons fresh lemon juice (or more to taste)

    1 teaspoon Dijon mustard

    1 teaspoon dried oregano

    Salt and black pepper, to taste

     

    Instructions:

    1. Cook the Tortellini:
    Boil cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    2. Make the Dressing:
    In a small bowl or jar, whisk together olive oil, fresh lemon juice, Dijon mustard, oregano, salt, and black pepper until well combined.

    3. Mix the Salad:
    In a large bowl, combine the cooled tortellini, cherry tomatoes, olives, feta, red onion, cucumber, and chopped parsley.

    4. Toss with Dressing:
    Pour the lemon-oregano dressing over the salad. Gently toss to coat all ingredients evenly.

    5. Chill and Serve:
    Refrigerate for at least 30 minutes before serving to let the flavors meld. Serve chilled or at room temperature, garnished with more feta or parsley if desired.
