Crockpot Creamy Chicken and Corn Chowder

Ingredients:
2 cloves garlic, minced
2 cups chicken broth
1/2 teaspoon smoked paprika
1 pound boneless, skinless chicken breasts (or thighs), diced
1 medium onion, chopped
2 cups frozen or fresh corn kernels
1 cup diced potatoes
1/2 teaspoon dried thyme
Salt and black pepper, to taste
1 cup heavy cream (or half-and-half for a lighter version)
2 tablespoons all-purpose flour (for thickening)
1/2 cup shredded cheddar cheese (optional, for extra richness)
Fresh parsley or green onions, for garnish
Directions:
1. Prep the base: In your crockpot, combine garlic, onion, chicken, potatoes, corn, chicken broth, thyme, smoked paprika, salt, and pepper.
2. Slow cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and potatoes are tender.
3. Make it creamy: In a small bowl, whisk the flour into the cream until smooth. Stir into the crockpot, then cook for another 30 minutes on high until thickened.
