    Sweet & Spicy Jalapeño Peach Chicken Thighs

    Looking for a bold, mouthwatering dinner idea? Try this Sweet & Spicy Jalapeño Peach Chicken Thighs recipe! Juicy, tender chicken thighs are coated in a sticky, smoky glaze made with fresh peaches and spicy jalapeños ready in just 30 minutes. It’s the perfect balance of sweet, heat, and savory flavors, ideal for busy weeknights or summer grilling!

     

    Ingredients:

    2 lbs boneless, skinless chicken thighs

    2 large yellow peaches, sliced

    2 fresh jalapeños, thinly sliced (remove seeds for less heat)

    2 tbsp olive oil

    3 tbsp honey (for extra sweetness)

    2 tbsp apple cider vinegar

    1 tbsp soy sauce (for umami depth)

    ½ tsp smoked paprika (for that smoky flavor)

    1 tsp garlic powder

    Salt and black pepper, to taste

    Fresh cilantro or parsley, for garnish

     

    Instructions:

    1. Season the Chicken:
    Pat chicken dry, then season both sides with salt, pepper, garlic powder, and smoked paprika.

    2. Sear the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for about 4-5 minutes per side, until browned and nearly cooked through. Remove from pan and set aside.

    3. Make the Peach Jalapeño Sauce:
    In the same skillet, add peaches and jalapeños. Cook for 3-4 minutes until slightly softened. Stir in honey, soy sauce, and apple cider vinegar. Simmer for another 2-3 minutes until the sauce thickens slightly.

    4. Glaze the Chicken:
    Return chicken to the skillet, spoon the sauce over, and cook for an additional 5 minutes, allowing the sauce to caramelize and the chicken to cook through.

    5. Serve:
    Garnish with fresh cilantro or parsley and extra peach slices, if desired. Serve with rice, quinoa, or a crisp summer salad!
