Packed with jalapeños, creamy coconut milk, Thai red curry paste, and tender vegetable dumplings, this warming bowl is perfect for lovers of spicy, comforting Asian-inspired meals.     Ingredients for Spicy Red Curry Dumpling Soup

    1 tablespoon vegetable oil

    1 onion, finely chopped

    3 cloves garlic, minced

    1 tablespoon fresh ginger, grated

    2 tablespoons Thai red curry paste

    4 cups vegetable broth

    1 can (14 oz) full-fat coconut milk

    1 cup water

    2 cups dumplings (frozen or homemade vegetable, chicken)

    1 cup fresh spinach

    1 red bell pepper, thinly sliced

    1–2 fresh jalapeños, sliced (adjust spice to your taste)

    2 tablespoons soy sauce

    1 tablespoon fresh lime juice

    Fresh cilantro (for garnish)

    Sliced green onions (for garnish)

    How to Make Jalapeño Red Curry Dumpling Soup

    Step-by-Step Instructions:

    Heat the vegetable oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until soft and translucent.

    Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.

    Add the Thai red curry paste and cook for another 2 minutes, stirring constantly to intensify the flavor.

    Pour in the vegetable broth, coconut milk, and water. Stir and bring the soup to a gentle simmer.

    Add the dumplings and cook according to package directions or until fully heated through (about 5–7 minutes).

    Stir in spinach, sliced red bell pepper, and jalapeños. Simmer for another 5 minutes until the vegetables are tender.

    Season with soy sauce and a splash of lime juice. Adjust seasoning to your liking.
