1 lb lean ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 (15 oz) can black or pinto beans, drained and rinsed
1 tsp chili powder
1/2 tsp ground cumin
Salt and black pepper to taste
1 (10 oz) can red enchilada sauce
4 large flour tortillas
1 ½ cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Optional: Fresh cilantro or chopped green onions for garnish
How to Make Cheesy Beef Enchiladas:
1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
2. Cook the beef: In a large skillet, cook the ground beef over medium heat until browned. Add chopped onion and garlic and sauté until softened.
3. Season the filling: Stir in the beans, chili powder, cumin, salt, and pepper. Cook for 3–5 minutes until well combined.
4. Assemble enchiladas: Spoon the beef mixture into tortillas, roll tightly, and place seam-side down in the prepared dish.
