Healthy Meatloaf Recipe
This Healthy Meatloaf is moist, tender, and packed with flavor! Made with lean ground beef, fresh herbs, and a tangy glaze, it’s the perfect comfort food for a family dinner. Plus, it stores and reheats beautifully, making it ideal for meal prep.
Ingredients:
Meatloaf:
2 lbs lean ground beef
1 medium onion, grated
2 cloves garlic, minced
1/4 cup ketchup
1/4 cup + 1 tablespoon milk
2 large eggs
2 tablespoons parsley, finely chopped
3/4 cup panko breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons Italian seasoning
Glaze:
3/4 cup ketchup
1 1/2 teaspoons white vinegar
2 1/2 tablespoons brown sugar
Instructions:
1. Preheat Oven: Preheat the oven to 375°F (190°C). Line a 9 x 5-inch loaf pan with parchment paper and lightly grease it.
2. Mix Ingredients: In a large mixing bowl, combine all the meatloaf ingredients. Mix until well combined but not overworked.
3. Shape and Bake: Transfer the meat mixture into the prepared pan, shaping it evenly to the edges. Bake for 35–40 minutes or until cooked through.
4. Prepare the Glaze: While the meatloaf bakes, whisk together the ketchup, vinegar, and brown sugar for the glaze.
5. Glaze and Finish: After 40 minutes, remove the meatloaf from the oven. Spread the glaze evenly over the top and bake for another 5–10 minutes until the glaze thickens.
6. Rest and Slice: Let the meatloaf rest for 10 minutes before slicing.
Tips & Storage
To Store: Keep leftover meatloaf in an airtight container in the fridge for up to 5 days.
To Freeze: Freeze whole or in slices for up to 6 months. Thaw in the fridge overnight before reheating.
To Reheat: Warm in a 350ºF oven or microwave until heated through.
