    1 onion, chopped

    2 cloves garlic, minced

    2 bell peppers, chopped (use red, green, or yellow for a vibrant mix)

    1 can (14.5 oz) diced tomatoes

    1 can (15 oz) tomato sauce

    4 cups beef broth (for deep, rich flavor)

    1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)

    1 tsp Italian seasoning

    Salt & black pepper, to taste

    Fresh parsley, for garnish

    Instructions:

    Brown the beef: In a large pot over medium heat, cook the ground beef until fully browned. Drain excess grease.
    Sauté the veggies: Add chopped onions, garlic, and bell peppers. Cook for 5 minutes until soft and fragrant.
    Simmer the soup: Stir in diced tomatoes, tomato sauce, beef broth, and seasonings. Bring to a gentle simmer.
    Add the rice: Mix in the cooked rice and let everything simmer for another 20 minutes to blend the flavors.
    Garnish & serve: Ladle into bowls, top with fresh parsley, and enjoy this comforting homemade soup!
