Comforting Homemade Chicken & Vegetable Soup

Ingredients:
2 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
2 cups shredded cooked chicken (rotisserie or boiled)
4 cups chicken broth
1 cup water
1 tsp paprika
1 tsp dried oregano
½ tsp black pepper
½ tsp salt (adjust to taste)
½ tsp red pepper flakes (optional)
1 tsp dried parsley
1 tbsp tomato paste
Instructions:
Sauté the aromatics Heat olive oil in a large pot over medium heat. Add onions and garlic and cook until fragrant.
Add the veggies Stir in carrots and potatoes, letting them cook for 3-4 minutes.
Season & simmer Mix in the shredded chicken, chicken broth, water, tomato paste, and spices. Stir well and bring to a boil.
Let it cook Reduce heat, cover, and simmer for 20-25 minutes until the vegetables are tender.
Final touches Taste and adjust salt and pepper as needed. Garnish with fresh parsley for extra flavor.
