Corned Beef Hash Skillet
This Corned Beef Hash Skillet is a hearty, savory dish perfect for any time of day. With crispy roasted Yukon Gold potatoes, sautéed peppers, onions, and flavorful canned corned beef, it’s both filling and delicious. Ingredients:
600g (21oz) yellow flesh potatoes (Yukon Golds work great), halved or quartered if large
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
225g (8oz) canned corned beef
Salt and black pepper to taste
4 spring onions, sliced
Low-calorie cooking spray
Instructions:
1. Preheat your oven to 200°C (180°C fan, 400°F) or gas mark 6.
2. Place the yellow potatoes in a saucepan, cover with water, and bring to a boil. Turn off the heat and let the potatoes sit in the water for 5 minutes.
3. Drain the potatoes, pat them dry, and place them on a baking sheet. Lightly spray with low-calorie spray and season with sea salt. Bake in the oven for 25-30 minutes, until the potatoes are lightly golden.
4. Remove from the oven and, using the back of a fork, gently flatten the potatoes. Set them aside.
5. Spray a large frying pan with low-calorie spray and sauté the diced onion for a couple of minutes until translucent.
6. Add the canned corned beef and diced peppers. Break up the corned beef with a wooden spoon and fry for another 2 minutes.
7. Mix in the potatoes and spring onions, season with salt and black pepper, and flatten the mixture down in the pan.
8. Reduce the heat and let the mixture brown underneath for 4-5 minutes. Then, place the pan under a grill and cook until the top is golden.
9. Divide into 4 portions, serve, and enjoy your delicious Corned Beef Hash Skillet!
