Ingredients:
16 oz rotini pasta (or elbow macaroni)
1/4 cup whole milk
1/4 cup heavy cream
12 oz evaporated milk
2 large eggs, whisked
1 stick butter, cubed
1 tbsp Greek yogurt with honey
1/2 lb Velveeta cheese, cubed
16 oz sharp cheddar cheese, freshly shredded
1 tsp dry mustard
1/4 tsp chili powder
1/4 tsp cayenne pepper
1/2 tsp dried dill
1/2 tsp dried parsley
1/4 tsp onion powder
1/4 tsp garlic powder
1 tsp white sugar
Salt & black pepper to taste
Instructions:
Preheat oven to 350°F (175°C).
Boil the pasta with a pinch of salt, cooking it slightly under al dente. Drain and transfer to a 9×13 baking dish.
Prepare the cheese sauce: In the warm pasta pot (no heat), whisk together whole milk, heavy cream, evaporated milk, eggs, and seasonings.
Pour the mixture over the pasta and stir well.
Mix in the butter and Velveeta until melted. Stir in the Greek yogurt for extra creaminess.
Add freshly shredded cheddar, reserving a handful for the top. Stir until well combined.
Sprinkle remaining cheese over the top.
Bake uncovered for 35–45 minutes, until golden brown and bubbly.
Let it rest for 15 minutes before serving.
