Ingredients:
½ cup sourdough starter
1½ cups water
About 4 cups flour
2 tsp salt
1 cup fresh blueberries (divided)
½ cup cream cheese
(Optional: 2-4 tbsp sugar for added sweetness)
Instructions:
Mix & Rest Combine starter, water, flour, and salt in a bowl. Mix until a dough forms. Let rest for 1 hour.
Stretch & Fold Every 30 minutes (for a total of 4 times), stretch and fold the dough, incorporating half of the blueberries during the process.
Bulk Fermentation Let the dough rise on the counter until puffy and doubled in size.
Shape & Fill Gently shape the dough, adding the remaining blueberries and cream cheese inside.
Cold Proof Place the shaped dough in a floured banneton or bowl, cover, and refrigerate overnight.
Bake Preheat oven to 450°F (232°C) with a Dutch oven inside.
Bake 30 minutes with the lid on.
Remove the lid and bake another 20 minutes until golden brown.
