Ingredients:
For the sliders:
1 medium yellow or red onion, halved and thinly sliced (about 2 cups)
6 oz shredded medium cheddar cheese (about 1 1/2 cups)
3 tsp neutral oil (canola or vegetable), divided
1 lb lean ground beef
2 tbsp prepared yellow mustard
2 tsp Worcestershire sauce
1/2 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1 (12-oz) package Hawaiian sweet rolls (e.g., King’s)
8 slices American cheese
1/2 cup sliced dill pickles
1 tbsp melted butter or olive oil
2 tsp white sesame seeds
For the burger sauce:
1/2 cup mayonnaise
1/4 cup ketchup
2 tbsp sweet pickle relish
1–2 tbsp prepared yellow mustard
Kosher salt and freshly ground black pepper
Instructions:
1. Prepare the sliders:
Preheat the oven to 350°F.
Heat 2 tsp neutral oil in a large skillet over high heat. Add the sliced onions and cook for 4–6 minutes until charred in spots. Transfer to a plate.
Reduce the heat to medium-high. Add 1 tsp oil and the ground beef to the skillet. Cook, breaking it into small pieces, for 5 minutes.
Stir in mustard, Worcestershire sauce, garlic powder, salt, and pepper. Cook for 2 more minutes until the beef is browned. Remove from heat.
2. Assemble the sliders:
Without separating the rolls, cut them horizontally in half. Place the bottom half in a small rimmed baking sheet or baking dish.
Layer the bottom half with American cheese slices, cooked onions, the ground beef mixture, shredded cheddar cheese, and sliced dill pickles.
Top with the remaining half of the rolls. Brush melted butter or olive oil over the tops and sprinkle with sesame seeds. Cover with aluminum foil.
3. Bake:
Bake covered for 10 minutes, then uncover and bake for another 12–15 minutes until the cheese is melted and the tops are golden.
4. Make the burger sauce:
In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, and mustard. Add salt and pepper to taste. Adjust mustard to preference.
Recipe Tips:
Make ahead: Prepare the onions and beef up to 1 day in advance. Store in airtight containers and reheat before assembling.
Storage: Store leftover sliders in an airtight container for up to 3 days.
