    Juicy Mushroom Swiss Cheese Meatloaf Recipe

     

    This Mushroom Swiss Cheese Meatloaf is a delicious twist on a classic comfort food! Juicy ground beef is stuffed with sautéed mushrooms and melty Swiss cheese, creating a flavorful center in every slice. It’s gluten-free and easy to prepare, making it perfect for weeknight dinners or special occasions. An optional tangy glaze adds a sweet-savory finish that everyone will love. Serve it with mashed potatoes or roasted veggies for a satisfying meal!

    Ingredients:

    For the Meatloaf:

    1 pound ground beef

    1/2 cup gluten-free bread crumbs

    1/4 cup milk (or unsweetened almond milk)

    1 egg

    1/2 teaspoon garlic powder

    1/2 teaspoon onion powder (optional)

    1 teaspoon dried thyme

    1 teaspoon Worcestershire sauce

    Salt and pepper to taste

    For the Mushroom Swiss Filling:

    1 cup finely chopped fresh mushrooms (cremini or button mushrooms work well)

    1 tablespoon olive oil or butter

    1/2 cup grated Swiss cheese

    1 tablespoon chopped fresh parsley (optional for garnish)

    For the Glaze (Optional):

    1/4 cup ketchup

    1 tablespoon Dijon mustard

    1 tablespoon brown sugar or honey

    Instructions:

    1. Prepare the Mushroom Filling:

    Heat olive oil or butter in a skillet over medium heat.

    Add mushrooms and sauté for 5–7 minutes, until tender and the moisture evaporates.

    Set aside to cool.

    2. Make the Meatloaf Mixture:

    In a large bowl, mix ground beef, gluten-free bread crumbs, milk, egg, garlic powder, onion powder, thyme, Worcestershire sauce, salt, and pepper. Combine thoroughly.

    3. Assemble the Meatloaf:

    Place the meat mixture on parchment paper or plastic wrap and shape it into a rectangle, about 1/2 inch thick.

    Spread the sautéed mushrooms evenly over the meat.

    Sprinkle grated Swiss cheese on top.

    Roll the meatloaf tightly into a log, sealing the edges to keep the filling intact.

    4. Cook the Meatloaf:

    Preheat the oven to 375°F (190°C).

    Place the rolled meatloaf seam-side down in a greased loaf pan or on a baking sheet.

    Bake for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).

    5. Add the Glaze (Optional):

    In a small bowl, mix ketchup, Dijon mustard, and brown sugar.

    Spread the glaze over the top of the meatloaf during the last 10 minutes of baking for a caramelized finish.

    6. Serve and Enjoy:

    Let the meatloaf rest for 5–10 minutes before slicing.

    Garnish with fresh parsley if desired, and serve warm.
