    Ingredients:

    2 large eggplants, sliced lengthwise (1/4-inch thick)

    2 cups ricotta cheese

    2 cups fresh spinach, chopped

    1/2 cup grated Parmesan cheese

    Salt and pepper to taste

    2 cups marinara sauce

    1 cup shredded mozzarella cheese
