Creamy Tuscan Salmon with Spinach & Cherry Tomatoes

This Creamy Tuscan Salmon recipe is a quick, one-pan dinner packed with Italian flavors. Juicy salmon fillets are cooked in a rich, garlicky Parmesan sauce with cherry tomatoes and fresh spinach. Perfect for busy nights, it’s ready in under 25 minutes! Serve it with lemon wedges for a hint of brightness. Ideal for salmon lovers craving a restaurant-quality meal at home!

    Ingredients:

    4 skinless salmon fillets

    2 tbsp olive oil

    3 cloves garlic, minced

    1 cup cherry tomatoes, halved

    1 cup baby spinach

    1/2 cup heavy cream

    1/4 cup grated Parmesan cheese

    1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

    Fresh parsley, chopped (for garnish)

    Lemon wedges (for serving)

    Instructions:

    1. Prepare the Salmon:

Season salmon fillets with salt, black pepper, and a sprinkle of Italian seasoning on both sides.

In a skillet, heat 1 tbsp olive oil over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden and cooked through. Set aside.

    2. Make the Creamy Tuscan Sauce:

Lower heat to medium, add remaining olive oil, and sauté minced garlic for 30 seconds.

Add cherry tomatoes and cook until softened, about 2-3 minutes. Stir in baby spinach and cook until wilted.

Pour in heavy cream and add Parmesan cheese, red pepper flakes (if using), and Italian seasoning. Simmer for 2-3 minutes until sauce thickens.

    3. Combine and Serve:

Return salmon fillets to the skillet, spooning the creamy Tuscan sauce over the top. Simmer for an additional 2-3 minutes.

Garnish with fresh parsley and serve with lemon wedges for a burst of citrus flavor.

    Prep Time: 10 minutes | Cook Time: 15 minutes | Servings: 4
