    Easy and Healthy Veggie Casserole

     

     

    This Delicious Veggie Casserole is a quick and healthy dish packed with vibrant vegetables like broccoli, cauliflower, and zucchini, making it perfect for any meal. Topped with creamy cheddar and Parmesan, it’s a satisfying option that even non-vegetable lovers will enjoy. The combination of fresh veggies, flavorful seasonings, and a crispy breadcrumb topping adds a comforting touch. You can easily customize it by adding proteins or making it vegan-friendly. Perfect for busy weeknights or family gatherings!

    Ingredients:

    2 cups broccoli florets

    2 cups cauliflower florets

    2 medium carrots, peeled and sliced

    1 zucchini, sliced

    1 red bell pepper, diced

    1 small onion, chopped

    3 cloves garlic, minced

    1 cup shredded cheddar cheese

    1/2 cup grated Parmesan cheese

    1 cup sour cream or Greek yogurt

    1/2 cup heavy cream or milk

    1 tbsp olive oil

    1 tsp dried thyme

    1 tsp dried basil

    Salt and pepper to taste

    1/2 cup breadcrumbs (optional for a crispy topping)

    Fresh parsley or chives for garnish

    Instructions:

    1. Preheat the Oven
    Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.

    2. Cook the Vegetables
    Boil a large pot of salted water. Add the broccoli, cauliflower, and carrots. Cook for 3-4 minutes until just tender. Drain and set aside.

    3. Sauté the Onions and Garlic
    Heat olive oil in a large skillet over medium heat. Sauté the onion for 3-4 minutes until softened. Add the garlic and cook for another minute.

    4. Mix the Vegetables and Cheese
    In a large bowl, combine the cooked vegetables with the zucchini, red bell pepper, sautéed onions, and garlic. Add the thyme, basil, salt, and pepper. Stir in the sour cream (or Greek yogurt), heavy cream, and cheddar cheese.

    5. Assemble the Casserole
    Transfer the veggie mixture into the prepared baking dish. Sprinkle Parmesan cheese evenly on top. If using breadcrumbs, add them for a crispy, golden finish.

    6. Bake the Casserole
    Bake for 20-25 minutes, or until the casserole is bubbly and the top is golden brown.

    7. Garnish and Serve
    Garnish with freshly chopped parsley or chives before serving.
