    Crispy Potato Pancakes Recipe

     

     

    These Crispy Potato Pancakes are a perfect combination of golden-brown, crunchy edges and soft, flavorful centers. Made with simple ingredients like grated potatoes, onions, and a touch of flour, they’re quick to prepare and delicious to enjoy. Whether served for breakfast, as a side dish, or a savory snack, they pair wonderfully with sour cream or applesauce. The addition of fresh chives or parsley adds a pop of color and flavor. Easy to make and crowd-pleasing, this classic recipe is sure to become a family favorite!

    Ingredients:

    4 medium potatoes, peeled and grated

    1 small onion, finely chopped

    2 large eggs

    1/4 cup all-purpose flour

    1 teaspoon baking powder

    Salt and pepper to taste

    1/4 cup vegetable oil (for frying)

    Sour cream or applesauce (optional for serving)

    Fresh chives or parsley for garnish (optional)

    Instructions:

    1. Prepare the Potatoes:

    After grating the potatoes, wrap them in a clean kitchen towel and squeeze out excess moisture. This step ensures your potato pancakes will be perfectly crispy.

    2. Mix the Ingredients:

    In a large bowl, mix together the grated potatoes, finely chopped onion, eggs, flour, baking powder, salt, and pepper. Combine well until you have a thick potato mixture.

    3. Heat the Oil:

    Heat vegetable oil in a skillet over medium heat, ensuring the oil evenly coats the bottom for optimal frying.

    4. Fry the Potato Pancakes:

    Scoop about 1/4 cup of the potato mixture and gently press it flat in the skillet. Fry each pancake for 4-5 minutes on each side until golden brown and crispy. Avoid overcrowding the skillet for even frying.

    5. Drain and Serve:

    Transfer the crispy pancakes to a paper towel-lined plate to drain excess oil. Serve with sour cream or applesauce, and garnish with chives or parsley if desired.
