Ingredients:
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 cup long-grain white rice (uncooked)
2 cups beef broth
1 can (14.5 ounces) diced tomatoes, drained
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups shredded cheddar cheese
1/2 cup sour cream
Directions:
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned. Drain any excess fat.
3. Stir in the white rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
4. Remove from heat and mix in the sour cream and half of the shredded cheddar cheese.
5. Transfer the mixture into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
