    Zesty Lemon Meringue Pie Cannolis

     

    The Zesty Lemon Meringue Pie Cannolis are a delightful fusion of classic Italian pastry and vibrant lemon flavors. Crisp cannoli shells are filled with a luscious blend of tangy lemon curd, marshmallow fluff, and whipped topping, creating a refreshing twist on a traditional dessert. The light dusting of powdered sugar adds just the right touch of sweetness. Perfect for any occasion, these cannolis are a must-try for lemon lovers and dessert enthusiasts alike. Serve them with lemonade or sparkling wine for an extra refreshing treat.

    Ingredients:

    For the Cannoli Shells:
    – 2 (9-inch) round pie dough circles (Pillsbury Pie Crusts recommended)
    – 1 egg (for egg wash)
    – 1 teaspoon water (for egg wash)

    For the Filling:
    – ¾ cup lemon curd
    – ½ cup marshmallow fluff
    – 1 cup thawed whipped topping
    – 1 teaspoon fresh lemon zest (optional)

    For Garnish:
    – 1 teaspoon powdered sugar

    Instructions:

    Prepare the Oven and Cannoli Forms:
    Preheat your oven to 425°F (218°C) and let the pie dough thaw for about 10 minutes.
    Lightly coat 8 metal cannoli forms with non-stick cooking spray.

    Making the Cannoli Shells:
    On a lightly floured surface, unroll the pie crust and cut out eight 4 ½-inch circles.
    In a small bowl, whisk together the egg and water to make an egg wash. Wrap the dough circles around the cannoli forms, using the egg wash to seal the edges.
    Freeze the wrapped cannoli forms for 10 minutes, then transfer them to a parchment-lined baking sheet. Bake for 10-12 minutes, or until golden brown. Let them cool completely before carefully removing the shells from the forms.

    Preparing the Filling:
    In a mixing bowl, combine the lemon curd and marshmallow fluff. Gently fold in the whipped topping and lemon zest until well mixed.
    Chill the filling in the refrigerator until you’re ready to assemble the cannolis.

    Assembling the Cannolis:
    Once the cannoli shells are cooled, pipe the chilled lemon filling into each shell.
    Finish by dusting the filled cannolis with powdered sugar just before serving.

    Serving Suggestions:
    Arrange the cannolis on a serving platter, garnished with lemon slices and fresh mint leaves. Enjoy these refreshing treats with a glass of lemonade or sparkling wine.
