Zesty Green Chili Chicken Soup
A warm, hearty, and flavor-packed bowl of comfort made with juicy chicken, fire-roasted green chilies, black beans, and corn. This easy one-pot chicken soup is loaded with Tex-Mex flavor and perfect for cozy nights or meal prep!
Ingredients:
1 lb boneless, skinless chicken breasts
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 can (15 oz) diced green chilies
1 can (15 oz) black beans, rinsed & drained
1 cup corn kernels (fresh or frozen)
1 tsp ground cumin
1 tsp chili powder
Salt & pepper to taste
Fresh cilantro, for garnish
Lime wedges, for serving
Directions:
1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and cook until translucent (about 5 minutes). Stir in garlic and sauté until fragrant (1 minute).
2. Add chicken breasts, chicken broth, green chilies, black beans, corn, cumin, chili powder, salt, and pepper. Bring to a boil.
3. Reduce heat and let simmer for 20–25 minutes, or until chicken is fully cooked.
4. Remove the chicken, shred it with two forks, and return it to the pot. Stir well and adjust seasoning if needed.
5. Serve hot, garnished with fresh cilantro and lime wedges for a burst of citrusy freshness.
