    This Slow Cooker Beef Enchiladas Recipe is a game-changer for busy weeknights! Loaded with tender beef mince, hearty kidney beans, and a medley of Mexican spices, it’s a flavorful one-pot meal. The tortillas soak up the rich sauce, while gooey mozzarella takes it to the next level. Customize the spice level to suit your family, and enjoy it straight from the slow cooker or baked to golden perfection. Perfect for family dinners, leftovers, or meal prepping!

    Ingredients:

    For the Slow Cooker:

    500g lean beef mince

    1 onion, finely chopped (fresh or frozen)

    800g kidney beans (2 cans, drained and rinsed)

    75g tomato puree

    500g passata

    2 beef stock cubes

    2 tsp ground cumin

    1/2 tsp chili powder (adjust for spice preference)

    1 tsp dried oregano

    3 tsp garlic powder

    2 red peppers, chopped

    To Finish:

    6 tortillas

    200g mozzarella (or your favorite melting cheese)

    For Garnish:

    Spring onions, chopped

    Red chili slices

    Instructions:

    1. Prepare the Slow Cooker Base:
    Add all the slow cooker ingredients into your slow cooker. Stir everything together to combine.

    2. Cook:

    Set the slow cooker to HIGH for 6 hours or LOW for 8 hours, allowing the flavors to meld beautifully.

    3. Assemble the Enchiladas:

    Before serving, cut the tortillas into bite-sized pieces and mix them into the beef mixture.

    Top with the mozzarella or your chosen cheese.

    4. Melt the Cheese:

    Option 1: Return the lid to the slow cooker and cook on HIGH for 30 minutes until the cheese is melted.

    Option 2: Transfer the mixture to an oven-safe dish and grill or bake at 200°C for 10 minutes until the cheese is golden and bubbly.

    5. Garnish and Serve:
    Sprinkle with spring onions and red chili for added flavor and presentation.

    Pro Tips:

    Adjust the Spice: Customize the heat by adding more chili powder or leaving it out for a milder dish. You can always spice up adult servings with a drizzle of hot sauce.
