    Ultimate Creamy Italian Sausage & Parmesan Soup

    Savor every spoonful of this Creamy Italian Sausage & Parmesan Soup a rich, comforting, and satisfying dish that’s perfect for busy weeknights or cozy weekends. Loaded with savory Italian sausage, creamy Parmesan cheese, and fresh baby spinach, this one-pot soup delivers restaurant-quality flavor at home.

    Whether you’re following a low-carb, keto-friendly lifestyle or just craving a warm, hearty bowl of goodness, this easy Italian soup recipe is guaranteed to please.

     

    Ingredients:

    1 tbsp olive oil

    1 lb Italian sausage (mild or spicy, casings removed)

    1 medium onion, finely diced

    2 cloves garlic, minced

    4 cups low-sodium chicken broth

    1 cup heavy cream

    1½ cups fresh baby spinach

    1 cup freshly grated Parmesan cheese

    1 tsp dried oregano

    ½ tsp crushed red pepper flakes (optional, for spice)

    Salt and black pepper, to taste

     

    Directions:

    1. Heat olive oil in a large pot or Dutch oven over medium heat.

    2. Add the Italian sausage and cook, breaking it up with a spoon, until browned (about 6-8 minutes).

    3. Stir in onion and garlic, sautéing for 3-4 minutes until soft and fragrant.

    4. Pour in chicken broth and bring to a simmer; cook for 5 minutes.

    5. Reduce heat to low and add the heavy cream, baby spinach, Parmesan, oregano, and optional red pepper flakes.

    6. Simmer gently for 5-7 minutes, stirring occasionally, until the spinach wilts and the soup thickens.

    7. Taste and adjust seasoning with salt and black pepper as needed.

    8. Serve hot, paired with crusty bread or a fresh green salad for a complete meal.

     

    Helpful Tips:

    Want extra spice? Use hot Italian sausage and extra red pepper flakes.

    Swap spinach for kale or Swiss chard for a different twist.

    Leftovers? Thin with extra broth when reheating it thickens naturally in the fridge!
