    Thai Vegetable Noodle Soup

    A light, comforting, and flavorful vegan Thai noodle soup loaded with fresh vegetables, creamy coconut milk, and aromatic red curry. This easy one-pot recipe is perfect for weeknight dinners or meal prep!

     

    Ingredients:

    1 tbsp coconut oil

    3 cloves garlic, minced

    1 tbsp fresh ginger, grated

    1 tbsp red curry paste

    4 cups vegetable broth

    1 can (14 oz) coconut milk

    1 tbsp soy sauce (or tamari for gluten-free)

    1 tsp brown sugar

    1 red bell pepper, thinly sliced

    1 cup shredded carrots

    1 cup snap peas

    2 cups cooked rice noodles

    1 tbsp lime juice

    Fresh cilantro, Thai basil, and lime wedges, for garnish

     

    Instructions:

    1. In a large pot, heat coconut oil over medium heat. Add garlic and ginger; sauté for 1–2 minutes until fragrant.

    2. Stir in the red curry paste and cook for 1 minute to release its flavors.

    3. Pour in the vegetable broth, coconut milk, soy sauce, and brown sugar. Bring to a gentle simmer.

    4. Add bell pepper, shredded carrots, and snap peas. Cook for 5–7 minutes until the veggies are tender yet crisp.

    5. Stir in the cooked rice noodles and lime juice. Simmer for another 2–3 minutes.

    6. Serve hot, topped with chopped cilantro, Thai basil, and a squeeze of lime.
