Thai Sweet Potato and Lemongrass Soup

Ingredients:
2 medium sweet potatoes, peeled and diced
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 stalk lemongrass, trimmed and smashed
1-inch piece fresh ginger, peeled and minced
4 cups vegetable broth (low sodium, if preferred)
1 can (14 oz) coconut milk
2 tablespoons soy sauce
Juice of 1 lime
Salt and black pepper, to taste
Fresh cilantro, for garnish
Instructions:
1. Sauté aromatics: In a large soup pot, heat olive oil over medium heat. Add chopped onion and cook for 3–4 minutes until soft and translucent.
2. Build flavor: Add garlic, ginger, and lemongrass. Cook for another 1–2 minutes, stirring until aromatic.
3. Simmer: Add diced sweet potatoes and stir well. Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until sweet potatoes are fork-tender.
4. Add creaminess: Discard lemongrass stalk. Stir in coconut milk and soy sauce. Let the soup simmer for another 5 minutes.
5. Blend: Use an immersion blender to puree the soup until velvety smooth. For a chunkier texture, blend only part of it.
6. Finish: Stir in lime juice and season with salt and pepper. Ladle into bowls and top with fresh cilantro.
