Ingredients:

 

1 ½ pounds ground beef
1 small onion, chopped
1 small green bell pepper, chopped
½ teaspoon minced garlic
½ teaspoon black pepper
½ teaspoon ground cumin
1 teaspoon salt
1 can (15 oz) pinto beans (with liquid)
1 can (15 oz) black beans (with liquid)
1 can (15 oz) kidney beans (with liquid)
1 can (15 oz) whole kernel white sweet corn, drained
1 can (14.5 oz) petite diced tomatoes (with liquid)
1 can (4 oz) chopped green chilies
1 packet (1.5 oz) taco seasoning
1 packet (1 oz) ranch dressing mix

 

Directions:

In a large skillet over medium heat, brown the ground beef with onion, green bell pepper, garlic, black pepper, cumin, and salt. Cook for 7–10 minutes until the beef is fully cooked and veggies are soft. Drain excess fat if needed.

Transfer the cooked beef mixture into a 3-quart slow cooker. Stir in pinto beans, black beans, kidney beans, corn, diced tomatoes, green chilies, taco seasoning, and ranch mix until everything is well combined.

Cover and cook on LOW for 2–3 hours, letting the flavors blend together into a rich and comforting soup.

Ladle the taco soup into bowls and top with shredded cheese, sour cream, fresh cilantro, sliced green onions, or crushed tortilla chips.
