    Ingredients:

    1 tbsp olive oil

    1 ½ lbs boneless, skinless chicken breasts, cut into chunks

    Salt and pepper, to taste

    3 cloves garlic, minced

    1 red bell pepper, diced

    1 onion, diced

    3 tbsp Thai red curry paste

    4 cups chicken broth

    1 can coconut milk (14 oz)

    8 oz rice noodles

    1 tbsp fresh lime juice

    Fresh cilantro, chopped (for garnish)

    Directions:

    1. Cook the Chicken: In a large pot, heat olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook until the chicken is browned on all sides and fully cooked through, about 6-8 minutes. Remove from the pot and set aside.

    2. Sauté Vegetables: In the same pot, add the garlic, red bell pepper, and onion. Cook for about 3-4 minutes, or until softened.

    3. Add Red Curry Paste: Stir in the red curry paste and cook for 1-2 minutes until fragrant. This step brings out the bold, aromatic flavors of Thai cuisine.

    4. Simmer the Soup: Add the chicken broth and coconut milk to the pot. Stir to combine, then bring to a simmer. Let it cook for 5-7 minutes, allowing the flavors to meld together.

    5. Cook the Rice Noodles: Add the rice noodles to the soup and cook according to package instructions, typically 4-6 minutes. Stir occasionally to prevent the noodles from sticking.

    6. Add Chicken and Lime: Return the cooked chicken to the pot and stir in lime juice for a fresh burst of flavor. Let everything heat through for 2-3 minutes.

    7. Serve and Garnish: Ladle the soup into bowls. Garnish with freshly chopped cilantro and a lime wedge if desired.
