Tender Beef Pot Roast with Carrots, Potatoes & Creamy Mashed Potatoes

Ingredients:
For the Pot Roast:
3–4 lbs beef chuck roast (well-marbled for tenderness)
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
4 cups beef broth (low sodium)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Salt & black pepper, to taste
6 large carrots, peeled & cut into chunks
6 large potatoes, peeled & cut into chunks
For the Creamy Mashed Potatoes:
4 large potatoes, peeled & cubed
1/2 cup unsalted butter
1/2 cup whole milk
Salt & black pepper, to taste
Instructions:
1. Preheat oven to 325°F (165°C). Heat olive oil in a Dutch oven over medium-high heat. Season chuck roast with salt and pepper, then sear on all sides until golden brown. Remove and set aside.
2. In the same pot, sauté onion for 3–4 minutes until softened. Add garlic and cook for 1 minute. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Bring to a simmer.
3. Return the roast to the pot, cover, and transfer to the oven. Cook for 3–4 hours, adding carrots and potatoes halfway through, until beef is fork-tender.
4. Boil cubed potatoes in salted water for 15–20 minutes until tender. Drain, then mash with butter and milk until smooth. Season with salt and pepper.
5. Remove roast and vegetables from the pot. Slice beef, arrange on a platter with carrots and potatoes, and drizzle with pan gravy. Serve alongside creamy mashed potatoes for the ultimate comfort meal.
