Sweet & Savory Pineapple Chicken and Rice
A tropical-inspired one-pan meal that’s bursting with flavor! This easy Pineapple Chicken and Rice recipe combines juicy chicken, sweet pineapple, and fragrant jasmine rice in a savory soy-ginger sauce perfect for busy weeknights!
Ingredients:
1 lb boneless, skinless chicken breast, cubed
1 cup fresh pineapple chunks
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice
2 cups chicken broth
1 tbsp soy sauce
1 tsp fresh grated ginger
Salt & pepper to taste
¼ cup green onions, sliced
1 tbsp sesame seeds
Instructions:
Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown. Remove and set aside.
Sauté the Veggies: In the same skillet, cook onions, garlic, and bell pepper until softened.
Add Pineapple: Stir in juicy pineapple chunks and cook for 2 minutes to enhance the natural sweetness.
Simmer with Rice: Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
Cook to Perfection: Reduce heat, cover, and simmer for 18-20 minutes until rice is tender.
Finish & Serve: Return the seared chicken to the skillet, stir well, and heat through. Garnish with green onions and sesame seeds.
