Ingredients:

For the Sponge Cake Roll:

4 large eggs, separated

½ cup granulated sugar, divided

½ cup all-purpose flour

1 teaspoon vanilla extract

Powdered sugar, for dusting

For the Strawberry Filling & Topping:

2 cups heavy cream

½ cup powdered sugar

1 teaspoon vanilla extract

2 cups fresh strawberries (hulled & sliced)

¼ cup strawberry jam or preserves (warmed for drizzle)

Fresh mint leaves (optional, for garnish)

 

Instructions:

1. Bake the Sponge Cake

1. Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

2. In a bowl, beat egg yolks with ¼ cup sugar until pale and thick. Stir in vanilla.

3. In a separate bowl, whip egg whites until soft peaks form. Gradually add the rest of the sugar and beat until stiff, glossy peaks form.

4. Gently fold egg whites into yolk mixture. Sift flour on top and fold carefully without deflating.

5. Spread batter evenly in pan and bake 10–12 minutes until cake springs back when touched.

 

2. Roll the Cake

1. Dust a clean kitchen towel with powdered sugar.

2. Immediately invert hot cake onto the towel, peel off parchment, and roll tightly from the short end with the towel inside.

3. Allow to cool completely.

 

3. Prepare the Whipped Cream Filling

1. Beat heavy cream with powdered sugar and vanilla until stiff peaks form.

 

4. Assemble the Strawberry Swiss Roll

1. Unroll cooled cake and spread whipped cream evenly.

2. Add half of the sliced strawberries.

3. Re-roll the cake carefully and place on a serving platter.

4. Drizzle with warmed strawberry jam glaze, then decorate with extra whipped cream, strawberries, and mint leaves.

5. Dust with powdered sugar and serve.
