    – 1/4 cup powdered sugar
    – 1 teaspoon vanilla extract
    – 1/2 cup fresh strawberries, diced

    For the French Toast:
    – 8 slices of bread (brioche or challah works best)
    – 4 large eggs
    – 1/2 cup milk
    – 1 teaspoon vanilla extract
    – Butter or oil for frying

    For Serving:
    – Maple syrup
    – Extra diced fresh strawberries
    – Powdered sugar (optional)

    Instructions:

    Prepare the Strawberry Cheesecake Filling:
    1. In a mixing bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

    1. Heat a skillet or griddle over medium heat and add a bit of butter or oil.
    2. Cook the stuffed French toast sandwiches until golden brown on both sides, about 3-4 minutes per side.

    Serve:
    1. Serve the stuffed French toast warm, topped with maple syrup, additional diced strawberries, and a dusting of powdered sugar if desired.
