    Spicy Sweet Potato Noodle Soup with Ground Chicken

    A bold and nourishing spicy sweet potato noodle soup infused with chili oil, garlic, soy sauce, and tender ground chicken. This comforting bowl is naturally gluten-free, high in protein, and ready in just 25 minutes perfect for a quick weeknight dinner or a healthy, warming meal.

    Ingredients:

    Noodles & Spicy Broth
    7 oz sweet potato noodles (fresh) or 4 oz dried
    2 cups chicken broth
    2 tbsp chili oil
    2 tbsp rice vinegar
    2 tbsp light soy sauce
    1 tsp dark soy sauce
    ½ tsp sugar
    Vegetables & Aromatics
    2 green onions, thinly sliced
    2 garlic cloves, grated
    2 tbsp chopped cilantro
    2 tbsp roasted peanuts, chopped
    Ground Chicken Topping
    1 tsp peanut oil
    4 oz ground chicken
    1 tsp soy sauce

    Instructions:

    Cook the Sweet Potato Noodles
    Boil dried noodles until al dente, then drain. Set fresh noodles aside for later.

    Make the Spicy Broth
    Combine chicken broth, chili oil, vinegar, soy sauces, and sugar. Simmer to develop rich flavor.

    Prepare the Ground Chicken
    In a pan, sauté ground chicken in oil until browned. Add garlic and soy sauce.

    Combine Noodles & Broth
    Add noodles to the simmering broth and let them soak up the spicy flavors.

    Serve
    Top each bowl with ground chicken, green onions, cilantro, and peanuts. Serve hot.
