Spicy Shrimp Jalapeño Soup

Ingredients:
500g shrimp, peeled & deveined (rich in protein & omega-3s)
1 tbsp olive oil (heart-healthy fats)
1 tbsp butter

2–3 fresh jalapeños, thinly sliced (metabolism booster & vitamin C)

½ tsp chili powder
1 (400ml) can fire-roasted diced tomatoes (vitamin-rich & flavorful)
4 cups seafood stock or chicken broth (hydrating & mineral-rich)
1 cup corn kernels (fiber & vitamin B)
Juice & zest of 1 lime (vitamin C & fresh flavor)
Salt & pepper, to taste
Fresh coriander, chopped (antioxidants & garnish)
Instructions:
Heat olive oil and butter in a large pot over medium heat. Add onions and jalapeños; cook 4–5 minutes until softened. Stir in garlic and cook for 30 seconds.
Add cumin, smoked paprika, and chili powder. Stir 1 minute until fragrant.
Pour in fire-roasted tomatoes and broth. Bring to a simmer and cook uncovered 10 minutes to infuse flavors.
Add shrimp and corn. Simmer 3–4 minutes until shrimp are orange and cooked through.
Stir in lime juice and zest. Season with salt and pepper. Garnish with fresh coriander.
