Southwest Chicken Detox Soup
Boost your health with this hearty Southwest Chicken Detox Soup! Packed with lean protein, nutrient-rich veggies, and bold southwest flavors, this soup is a satisfying and wholesome meal that’s perfect for a detox or a cozy weeknight dinner.
Ingredients:

1 1/2 pounds boneless skinless chicken breasts
1 large onion, peeled and chopped
4 cloves garlic, minced
1 tablespoon olive oil
3 cans Old El Paso Chopped Green Chiles (4.5-ounce cans)
14.5 ounces fire-roasted crushed tomatoes
3 quarts chicken stock
1 tablespoon ground cumin
1 teaspoon crushed red pepper
1/2 teaspoon turmeric
2 1/2 cups sliced carrots
4 cups chopped cabbage
3 cups small broccoli florets
2 avocados, peeled and diced
Salt and pepper to taste
Instructions:
1. Sauté Aromatics:
In a large 6-8 quart pot over medium heat, add olive oil, chopped onions, and garlic. Sauté for 5-6 minutes until softened and fragrant.
2. Simmer Chicken and Spices:
Add the raw chicken breasts, chopped green chiles, crushed tomatoes, chicken broth, cumin, crushed red pepper, turmeric, carrots, and 1 1/2 teaspoons of sea salt. Bring to a boil, then reduce the heat and simmer for 20 minutes until the chicken is cooked through.
3. Shred Chicken:
Remove the chicken breasts from the pot and place them on a cutting board. Shred them with two forks.
4. Add Veggies:
Add the chopped cabbage and broccoli to the pot. Simmer until the broccoli is tender.
5. Combine and Season:
Stir the shredded chicken back into the soup. Taste and adjust the seasoning with salt and pepper if needed.
6. Serve:
Ladle the soup into bowls and top with generous amounts of diced avocado. Serve warm and enjoy!
Pro Tips:
If the broth reduces too much, add 2-3 cups of water and adjust the seasoning.
For extra flavor, add a squeeze of lime juice or a sprinkle of chopped cilantro before serving.
