Instructions:
Step 1: Season the Chicken
Pat the chicken dry with paper towels. Generously season it inside and out with kosher salt (adjust based on bird size) and pepper.
Place half of the garlic cloves inside the cavity. Let the chicken rest for 30 minutes or refrigerate uncovered for up to 24 hours for extra flavor.
