Slow Cooker Mushroom & Gruyère Crustless Quiche
A rich and creamy low-carb crustless quiche packed with savory mushrooms, nutty Gruyère cheese, and fresh thymeperfect for brunch, meal prep, or a protein-packed breakfast! Made effortlessly in the slow cooker, this dish is gluten-free, keto-friendly, and bursting with flavor.
Ingredients:
2 tbsp olive oil
1 lb mushrooms, sliced
1 small onion, finely chopped
1 cup Gruyère cheese, grated
6 large eggs
1 cup whole milk
½ cup heavy cream
1 tsp salt
½ tsp black pepper
1 tbsp fresh thyme leaves
Directions:
Sauté the veggies: Heat olive oil in a skillet over medium heat. Add mushrooms and onions, cooking until soft and fragrant (about 10 min).
Prepare the slow cooker: Grease the inside with butter or non-stick spray.
Mix the eggs: In a large bowl, whisk together eggs, milk, heavy cream, salt, and black pepper.
Assemble: Spread the mushroom-onion mixture evenly in the slow cooker. Sprinkle Gruyère cheese on top. Pour the egg mixture over it. Finish with fresh thyme.
Cook low & slow: Cover and cook on LOW for 4-5 hours or until the quiche is set and edges are lightly browned.
Serve & enjoy: Let cool slightly before slicing.
