Slow Cooker Meatloaf

Ingredients:
1 tablespoon olive oil
½ large onion, chopped
3 garlic cloves, minced
2 tablespoons fresh parsley, chopped (or 2 teaspoons dried parsley)
2 tablespoons fresh thyme, chopped (or 1 teaspoon ground thyme)
2 lbs ground beef
2 eggs, beaten
¾ cup bread crumbs
½ cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
Instructions:
Heat olive oil in a skillet over medium heat.
Sauté onions and garlic until tender (about 3 minutes). Add parsley and thyme, then cook for another 2 minutes. Let cool.
In a large bowl, mix ground beef, eggs, bread crumbs, ketchup, Worcestershire sauce, black pepper, and the cooled veggie mixture.
Shape into a loaf and place in a lined slow cooker. Spread evenly.
Cook on low for 3-5 hours, or until the internal temperature reaches 160°F.
Drain excess grease and let the meatloaf rest for 5 minutes before slicing.
