Slow Cooker Italian Sausages with Peppers and Onions
Tender, juicy sausages simmered with colorful bell peppers and onions in a savory tomato herb sauce an easy, hearty slow cooker dinner the whole family will love!
Ingredients:
4 Italian sausage links (choose spicy or mild to your taste)
2 red bell peppers, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
½ cup chicken broth
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper, to taste
Optional: Serve with hoagie rolls, mashed potatoes, or over cooked rice
Instructions:
1. In a skillet, heat olive oil over medium heat. Brown the Italian sausages on all sides for 5–6 minutes (no need to cook fully).
2. Add the sausages to your slow cooker along with the sliced red, green, and yellow bell peppers, onion, and garlic.
3. Pour in the drained diced tomatoes and chicken broth. Sprinkle in oregano, basil, salt, and pepper.
4. Cover and cook:
Low for 6–7 hours
High for 3–4 hours
Until sausages are fully cooked and veggies are tender.
5. Serve hot over rice, hoagie rolls, mashed potatoes, or even pasta for a comforting meal!
