Ingredients:
3-pound beef chuck roast
1 packet au jus mix (1 ounce)
1 packet Italian seasoning (1 ounce)
1.5 cups tomato juice
Salt and black pepper, to taste
2 tablespoons garlic, minced
1 tablespoon onion flakes, minced
Instructions:
1. Prep the Roast:
Season the beef chuck roast generously with salt and black pepper. Place it in your slow cooker.
2. Mix and Pour:
Combine the au jus mix, Italian seasoning, garlic, and onion flakes. Spread the mixture evenly over the roast. Pour the tomato juice into the slow cooker, ensuring the roast is fully covered.
3. Slow Cook:
Cover the slow cooker with a lid and cook:
On low heat for 8–10 hours
On high heat for 4–6 hours
The roast will be fall-apart tender when done.
4. Serve with Gravy:
Remove the pot roast from the slow cooker and let it rest for a few minutes.
To make a flavorful gravy, strain the cooking liquid into a saucepan. Simmer over medium heat. Mix 2 tablespoons of cornstarch with 1/4 cup cold water, then stir it into the simmering liquid. Cook until the gravy thickens.
5. Plate and Enjoy:
Slice or shred the pot roast, drizzle with gravy, and serve with your favorite sides like mashed potatoes or roasted vegetables.
