    Make dinner easy and delicious with this Slow Cooker Garlic Herb Chicken and Potatoes! Juicy, flavorful chicken thighs and tender baby potatoes are cooked to perfection with garlic, lemon, and aromatic herbs. This hearty, comforting meal is perfect for a busy weeknight or a cozy family dinner.

    Ingredients:

    4 bone-in, skin-on chicken thighs

    1 pound baby potatoes, halved

    4 cloves garlic, minced

    1 tablespoon olive oil

    1 teaspoon dried thyme

    1 teaspoon dried rosemary

    1 teaspoon dried oregano

    Salt and pepper to taste

    1 cup chicken broth

    Juice of 1 lemon

    Fresh parsley for garnish (optional)

    Directions:

    1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear until golden brown on both sides (about 3–4 minutes per side).

    2. Prepare the Slow Cooker: Transfer the chicken to the slow cooker. Add halved baby potatoes, minced garlic, thyme, rosemary, and oregano.

    3. Add Flavor: Pour chicken broth and lemon juice over the chicken and potatoes.

    4. Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken is tender and cooked through.

    5. Finish and Serve: Taste and adjust seasoning if needed. Garnish with fresh parsley and serve warm.
