    Slow Cooker Chicken Noodle Soup Recipe

     

    This Slow Cooker Chicken Noodle Soup is the perfect comfort food for any season. It’s packed with tender chicken, fresh vegetables, flavorful herbs, and hearty noodles, making it a wholesome and satisfying meal. With simple preparation, you can let your slow cooker or Instant Pot do all the work. Whether you’re fighting a cold or craving a warm bowl of goodness, this recipe is a family favorite. Healthy, easy, and delicious it’s the ultimate cozy dinner!

    Ingredients:

    1 pound boneless, skinless chicken breasts or thighs, seasoned with salt and pepper

    5 ounces uncooked pasta

    8 cups low-sodium chicken broth (or 4 cups broth, 4 cups water)

    2 celery ribs, sliced

    2 medium carrots, peeled and diced or sliced

    1/3 cup onion, diced

    2 garlic cloves, minced

    1 bay leaf

    Soup seasonings:

    1 1/2 teaspoons salt

    1 1/2 teaspoons dried thyme or rosemary

    1/2 teaspoon pepper

    Chicken seasonings:

    1 teaspoon salt

    1 teaspoon garlic powder

    1 teaspoon onion powder

    1/2 teaspoon paprika

    1/4 teaspoon pepper

    1 teaspoon oil

    1 tablespoon oil (for Instant Pot only)

     

    Instructions:

    Slow Cooker Chicken Noodle Soup

    1. Prepare the Chicken:

    Rub the chicken with 1 teaspoon oil and the chicken seasonings until evenly coated.

     

    2. Assemble in the Slow Cooker:

    Add the seasoned chicken to the slow cooker.

    Stir in the broth, celery, carrots, onion, garlic, bay leaf, and soup seasonings.

     

    3. Cook:

    Cook on HIGH for 3-4 hours or LOW for 6-8 hours.

     

    4. Shred and Add Noodles:

    Remove the chicken, shred it, and return it to the slow cooker.

    Add the uncooked noodles and cook on HIGH for an additional 10-20 minutes until the pasta is tender.

     

    5. Serve:

    Remove the bay leaf and enjoy your comforting bowl of chicken noodle soup!
