Slow Cooker Chicken Chili Recipe

Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 (15 oz) can diced tomatoes, undrained
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can black beans, rinsed and drained
1 (10 oz) can diced tomatoes with green chilies, undrained
1 tsp chili powder
1/2 tsp cumin
1/4 tsp oregano
Salt & black pepper to taste
Optional: 1/2 cup fresh cilantro, chopped (for garnish)
Directions:
1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear the chicken until golden. Set aside.
2. In the same skillet, cook onion, garlic, and bell pepper until soft (about 5–7 minutes).
3. Add veggies, diced tomatoes, kidney beans, black beans, and diced tomatoes with chilies. Season with chili powder, cumin, and oregano. Stir well.
4. Place browned chicken into the slow cooker and mix everything together.
5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until chicken is tender and flavors meld beautifully.
6. Taste and adjust seasonings. Garnish with fresh cilantro if desired.
7. Ladle into bowls and serve hot with tortilla chips, shredded cheese, or a slice of warm cornbread.
