    Ingredients:

    4 boneless, skinless chicken thighs

    1 medium onion, thinly sliced

    1 red bell pepper, sliced

    1 green bell pepper, sliced

    3 garlic cloves, minced

    1 can (14.5 oz) diced tomatoes

    1 cup chicken broth

    1 tbsp tomato paste

    1 tsp dried oregano

    1 tsp dried basil

    ½ tsp crushed red pepper flakes (optional for a kick)

    Salt and freshly ground black pepper, to taste

    Fresh chopped parsley, for garnish

    Directions How to Make Chicken Cacciatore in a Crockpot:

    1. Layer the chicken: Place chicken thighs in a single layer in your slow cooker or crockpot.
    2. Add vegetables: Top with sliced onions, red and green bell peppers, and minced garlic.
    3. Build the sauce: Pour in diced tomatoes and chicken broth. Stir in tomato paste until well blended.
    4. Season to perfection: Add oregano, basil, crushed red pepper flakes (if using), salt, and black pepper.
    5. Slow cook it:

    On low: Cook for 6–7 hours

    On high: Cook for 3–4 hours
    (Until the chicken is tender and shreds easily.)

    1. Shred and serve: Use two forks to shred the chicken directly in the sauce and stir well.
    2. Garnish & enjoy: Sprinkle with fresh parsley and serve hot.
