    This Slow Cooker Beef and Noodles with Mushrooms is the ultimate comfort food, combining tender shredded chuck roast, creamy noodles, and savory mushrooms. The slow cooker does all the work, making it a perfect hands-off meal for busy days. Packed with rich flavors from Worcestershire sauce, thyme, and aromatic seasonings, this dish is hearty and satisfying. It’s an ideal recipe for family dinners, cozy nights, or meal prepping.     Ingredients:

    2 to 2 1/2-pound boneless chuck roast (trimmed of excess fat)

    1 tablespoon Montreal steak seasoning

    1/2 teaspoon salt

    1/2 teaspoon black pepper

    2 tablespoons vegetable oil

    1 onion, diced

    3 garlic cloves, chopped

    1/2 teaspoon dried thyme

    1 bay leaf

    4 cups low-sodium beef broth

    1 tablespoon Worcestershire sauce

    12 ounces frozen egg noodles (Reames recommended)

    3 tablespoons butter

    12 ounces white mushrooms, sliced

    1/2 cup heavy cream

    Instructions:

    1. Season the Roast: Generously season the chuck roast with Montreal steak seasoning, salt, and pepper.

    2. Sear for Flavor: Heat vegetable oil in a skillet over medium-high heat. Sear the roast on all sides until golden brown. Transfer to a 6-quart slow cooker.

    3. Add Aromatics: Add diced onion, garlic, dried thyme, and bay leaf to the slow cooker. Cover and cook:

    HIGH: 4 to 5 hours

    LOW: 6 to 8 hours

    4. Prepare the Noodles: Remove the roast to a cutting board and cover with foil. Add beef broth, Worcestershire sauce, and frozen egg noodles to the slow cooker. Stir, cover, and cook on HIGH for 1 to 1 1/2 hours.

    5. Cook the Mushrooms: Melt butter in a skillet over medium-high heat. Sauté mushrooms until browned and tender.

    6. Shred the Meat: Use two forks to shred the roast into bite-sized pieces.

    7. Combine: During the final 15 minutes of cooking, stir in shredded beef, mushrooms, and heavy cream. Season with salt and pepper to taste.

    8. Serve and Enjoy: Ladle into bowls and savor this creamy, savory dish.
