Simple Chicken Salad Recipe
Ingredients:
Chicken Salad:
– 1 lb cooked chicken breast, diced (approximately 4 cups)
– 2 cups seedless red grapes, halved
– 1 cup celery, thinly sliced (from 2-3 celery sticks)
– 1/2 cup finely chopped red onion (about 1/2 medium onion)
– 1 cup pecans, toasted and roughly chopped
Dressing:
– 1/2 cup mayonnaise
– 1/2 cup sour cream or plain Greek yogurt
– 2 tablespoons lemon juice
– 2 tablespoons finely chopped dill
– 1/2 teaspoon salt, or to taste
– 1/2 teaspoon black pepper
Instructions:
1. Toast Pecans: Heat pecans in a dry skillet over medium-low heat for 3-5 minutes until golden and fragrant. Transfer to a cutting board, cool, then roughly chop and set aside.
2. Prepare Salad: In a large bowl, combine diced chicken, halved grapes, sliced celery, chopped onion, and cooled pecans.
3. Make Dressing: In a small bowl, whisk together all dressing ingredients until well combined.
