Ruth’s Chris Sweet Potato Casserole

Ingredients:
Crunchy Pecan Crust
1 cup brown sugar (reduce if preferred)
1/3 cup all-purpose flour
1 cup chopped nuts (pecans recommended)
1/4 cup melted butter
Sweet Potato Filling
3 cups mashed sweet potatoes (fresh or canned, well drained)
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs, well beaten
1/2 cup melted butter
Directions:
In a bowl, mix brown sugar, flour, chopped pecans, and melted butter. Set aside.
Preheat your oven to 350°F (175°C).
In a separate bowl, combine mashed sweet potatoes, sugar, salt, vanilla, eggs, and melted butter. Mix until smooth and creamy.
Spread the sweet potato mixture into a buttered baking dish.
Sprinkle the pecan topping evenly over the surface.
Bake for 30–35 minutes, or until the topping is golden and the casserole is set.
